Kiwi has always been one of my favorite fruits. I love love love love the taste of kiwi.
Like, I have a problem because if I could live off kiwi, that’s all I would ever eat again.
Health benefits of this bright green wonder-fruit:
♥ Great source of vitamin C, vitamin K
♥ Good source for fiber & copper
♥ Also contains potassium, manganese, folate, & vitamin E

Note: Did you know that you can and should eat the kiwi skin?? (A huge “thanks” to one of my readers for letting me know this.)
Eating the skin actually triples your fiber intake and preserves a lot of the vitamin C.
This info actually makes my life so much easier. I have the hardest time peeling kiwis. Check out this post for more “WTF, how did I not know this?!” type shit.
Anyway, I was flipping through Shape Magazine the other day and saw a delish smoothie bowl featuring kiwi so naturally I raced to the kitchen to make it.
I tweaked it a little bit to make it my own and added in some extra ingreds, but obvi it tasted sooooooo amazing that I had to share it with you!
Kiwi Greens Morning Smoothie Bowl

◊ 1 c. Spinach
◊ Unsweetened coconut flakes
◊ 1/2 c. Almond Milk
◊ Blueberries, Banana, Strawberries (basically any other fruit you want to add)
◊ Almonds (optional)
◊ Blend spinach & almond milk together
◊ Add in ice, kiwi, pineapple, & blend again
◊Pour into a bowl and top with remaining ingredients

This is a super easy & quick recipe and you can totally modify it to suit your tastebuds. Add in extra toppings or add in a few other green fruits (pears, green apples, kale), or take away some ingredients. Whatever you wanna do, go for it!
