I am obsessed with the recipe and it is so good, healthy, and filling.
Just little a note before I give out the recipe, I don’t have a clue when it comes to actually measuring out ingredients.
I usually just wing it and I think that’s why I suck at baking. I don’t like to follow the whole “teaspoon of this, half a cup of that” nonsense.
I just like to throw in what I think looks right and hope to the food Gods that my meal comes out edible. HA
That being said, I’m just guessing when I’m writing the measurements below. So def add or subtract certain things to you’re liking.
The Perfect Veggie Pasta
♦ Veggie Pasta (I use Barilla Veggie Pasta)
♦ Zucchini, sliced
♦ Yellow Squash, sliced
♦ Organic tomato sauce ( I use Rao’s because it has fresh ingreds & is organic )
♦ Shit ton of minced garlic (maybe 2 tbsp?? )- I love garlic
♦ 1 tbsp Basil
♦ 1 tbsp Olive Oil
♦ Parmesan Cheese (I use Mama Francesca Garlic Parmesan)
♦ Saute your sliced zucchini and squash in the olive oil and minced garlic while you’re cooking the pasta.
♦ Once the veggies are tender, you can take them off the heat.
♦ Drain the pasta, then toss in with the veggies. Turn the heat back on low, and add in the tomato sauce.
♦ Toss it all together, pour into a cute serving bowl, and top with parm cheese.
This recipe is so good, so easy, and literally takes like 20 minutes to make.
I hate making stuff that takes forever and involves a lot of work.
You can add in other veggies or seasonings too. Totally up to you and your preference!
